Flourless Pancakes?

So this picture is pinned on Pinterest with this description: "1 ripe banana + 2 eggs = pancakes! Whole batch = about 250 cals. Add a dash of cinnamon and a tsp. of vanilla! Top with fresh berries!"

So since I am trying to stay away from flour, I wanted to try these.

So it was super easy, whip up two eggs and a ripe banana. I just used my hand mixer because I didn't see the point in dirtying up the food processor for such a small thing. They cook much like real pancakes, bubbles and all :)


Taste: So they taste sweet with a hint of egg, which is not a surprise given their ingredients. I enjoyed them and have actually made them many times again since my initial try.
Batter: I have found the longer you whip it the better they turn out after they are cooked. It helps make the batter a bit "thicker" plus you do not want a chunk of banana in the middle.
Future: Since I have already made this a couple times I can easily say it has a good future in my household. It is an healthier alternative to pancakes that actually tastes good.
Pinteresting: I think this one scores high on the "Close to Pinterest" scale!

Almond Butter Cookies

So I have finally gotten back around to blogging. This was a recent Pinterest idea that I decided to try because I have been limiting my carbs. The recipe is super easy and can be found here:

I purchased the almond flour from Whole Foods. I did find that buying the pack it yourself type was cheaper then the prepackaged flours.

I followed the recipe (except used Splenda, you could use stevia but I am allergic) and here is the result:

Now the verdict:
Taste: They are not "slap yo mama" fantastic but they were pretty good. You can taste the nuttiness of the almond flour which adds to the texture.
Batter: It made very little batter. The cookies shown are probably comparable to a half dollar in size.
Future: I was only able to eat three before I was tired of the taste and I am not sure if it was due to the almond or the splenda. I guess that is a good thing since you do not want to overdo anyway. Of course my daughter will not be able to eat these (nut allergy) so I probably will not be making these very often.
Pinteresting: So it qualifies for being what is portrayed on Pinterest and worth the try!
